Corn Pico de Gallo
Chopped tomatoes and cilantro, corn kernels, juice of one lime and lemon, salt and pepper to taste
Super Crispy Roasted Chicken *It's All Good Cookbook
Salt-bath the chicken. Pat thoroughly dry. Salt/pepper cavity generously. Rub bird with EVOO. Salt/pepper underside then place breast up. Stuff cavity with lemon, onion; generously salt/pepper top. Roast 90-minutes or until thigh registers at 165 degree F. After roasting, let bird rest for 10-minutes…and pour juice glass of hot water in the roasting dish; scrape up all the brown bits then use it and juice to serve with the chicken.
Green Rice
While rice doesn’t literally come stocked in the grocery in the color green, it may be “green’d” with an assortment of herbs! Chop up what you like then toss it in with boring white or brown colored rice. Pictured: parsley and edible flowers.
Sweet Slaw
Unconventional Cole slaw made with radishes and mint, splash of vinegar and a few dashes of salt.
Avocado Scramble
Avocado and egg whites have mild taste. Mash these together then add blueberries (optional a dash of hot spice like habanero salt or cayenne). Pre-prepared hard boiled eggs expedite!
Corn Rice
Rice is carb-dense and corn is a starchy carbohydrate. Toss these two together then serve up the ideal hand-sized portion for that carb-dense side. Enhance the flavor by broiling or grilling the corn…if charred is one of your favorite flavor-profiles.
Salmon
Baked, broiled, or grilled - salmon is an excellent fish to herb-up, as well as squeeze fresh fruit juices over, prior to heating through.
Mushroom Scape
Toss in a pan over medium-high heat with some EVOO: mushrooms, onions, and garlic scapes. Wag salt over them then sauté until desired texture. Featured in the meal Beef Tater Scape
Fennel Leek Salad
Chopped kale, sautéed leek, and fennel dressed in EVOO with a dash of balsamic vinegar. Served with a Sweet Potato Sandwich (also featured in this post).
Sweet Potato Sandwich
Why not a potato sliced in half for a sandwich? Go for it! This potato was toasted in a toaster. Beef, Sir Kensington’s Special Sauce, and caraway sauerkraut. WOW! #gamechanger
Summer Salad
Cut and raw: green beans, watermelon, yellow tomatoes, radishes. All tossed in habanero infused salt.
Garlic Bread
First brush EVOO on side of breath. Follow with a brush-stroke of one clove of garlic. The longer the brushing strokes the more garlic-infused the bread. Shave parmesan on top then bake in oven at 400 F degrees until desired toast.
Sunset Salad
You know of those crisp hues as the sun sets? You can eat them! Top some greens with cut radishes, yellow cherry tomatoes, cashews, and a sprinkle of thinly sliced bacon then top with a blitz dash of EVOO
Saute Salad
Sauté your choice color pepper with onion in a one-count pour of EVOO - or alternative hot temp oil. Just before removing toss a bunch of fresh spinach leaves in for a flash sauté.
Spin on Mediterranean Salad
Nix the lamb for an egg on a bed of greens (bib lettuce here), diced olives, cherry tomatoes, and freshly sliced red onions. Salt and pepper to taste.
Butternut Squash Soup
A Gwyneth Paltrow recipe that can be quickly pulled from the internet. Option to top with a hearty green and a dollop of sour cream - adds color, and fat.
Broiled Grapefruit
When fruit is heated through it tenderizes and amplifies the sweet juicy-ness. Many prepare grapefruit for the broiled by topping with some form of sugar - granulated, honey, agave…this enhances the chard-ness. Yet, the act of heating fruit already amplifies it’s sweet flavor! So, I go without the added sugar (because fruit is a natural source of sugar). Broil on low or high - depending on your timeframe.
HBE Salad
Hard boiled eggs, chopped vine-ripe tomatoes, and sweet peas. Herb this up according to palette.
Biscuits
Homemade with cornmeal. Follow the recipe on the bag/box (this is Bob’s Redmill).
Poached Eggs
Poached eggs in a 1-second pour of EVOO, plus white vinegar. Check out our post on how to make.
Mediterranean Salad
Best on a bed of Bibb lettuce or toss in the Bibb for all-in-one serving. Nicoise olives, feta, tomatoes, red onion, EVOO, dash of s&p.
Pico de Gallo Plus
Chop a handful (or more!) of cherry tomatoes, red onion, cilantro. Toss in the juice of one lime, dash of salt. Then top with some microgreens for mild heat and a twist on taste.
Chicken & Creamy BOO Salad
Bake a chicken breast then top on this tasty salad. Lay a bed of greens on your dish. Toss together black olives, onions (and broccoli florets if you wish) with a dressing of choice. Gently lay the mix on your bed of lettuce and then finish with the chicken.
One Pan O Peas
Sautee speciality mushrooms, onions, and garlic. Add in peas the final 2-minutes.
